When I was younger, my Auntie Ann used to make ‘sliders’ – it was a rectangular block of vanilla ice-cream sandwiched in between two layers of wafer, the same wafer as an ice-cream cone. I loved them, they were a rare treat, usually for when I was having a tantrum and needed calming down, and it worked.
In later life, having revisited the slider, I remembered how tasty they were but also how I never really liked the wafer. Usually the two wafer book-ends would end up in the bin, which was a plastic bag hung over the kitchen doorknob, unless they were drenched in ice-cream and they were delicious by proxy. What a revelation the gingerbread ‘bread’ of the sandwich was! Everything is delicious! The outside is as good as the inside! The crunchy gingerbread, crispy at the start but getting soggy with ice-cream as it soaks in – this was the treat I had hoped for.
Sweet gingerbread wrapped around vanilla ice-cream, biscuity and creamy and so, so moreish!
